      Plans A and B don't seem to workable, so perhaps a Plan C is appropriate.  The key is labor costs and soon everyone will be paying $15 an hour.
       Many places use private firms specializing in concessions or partner with a college food program just up the road (hint, hint).
        Then there is the notion of an all vending operation.  Everywhere people are buying technology to limit labor cost and preserve inventory. I am sure a company like Canteen could advice on the options available.
        In some communities the whole recreational facility is privatized, leaving all the hassles to others, and eliminating all he political pressures to waive costs.
        Short term is get something up and running, and then thoughtfully craft a path for the future.

Yes you are right on all of this. Especially the part about short term "getting something up and running". The obvious answer to that short term goal is contract with Maggie's

Every detail right from the operator/menu right down to the types of soda served should have been worked out prior to performing any of the work on this place.
This falls squarely on the shoulders of the people who campaigned for it's approval and not the current city leadership.

Got a kick out of the Ole Mackie's farm credit card issues, and how they'll have to deal with Credit Card chips.....Over the years the "Farm" has gotten it's share of Freebies from the State Govt., they even stored grain on VanDuzee St. at the warehouse until the rats came..

Previous administration had JCC come and look at the stand to run. I heard they weren't interested but never hurts to try again. The on concession failed at Administration level. When there was little interest despite news flashes boasting several interested parties the writing was on the wall. The DEPARTMENT should have said they are ready and willing to take on the task in interest of the community and success for the Arena. They failed. Next it will be a request for a promoter to make use of the facility because the department won't be able to do that once the novelty of a new facility wears off. So far I haven't seen large crowds skating but the season is over for most.

I see failure from council and administration, yet when a short term fix was determined by council was directed P&R balked. If they do not comply are the not being insubordinate?
