WDT: Concession Rebid to Await Plans

      Plans for an enhanced concession kitchen at the Fairgrounds Arena are being drawn, in a vacuum, and when released , the operation of the eating spot will again go out to bid.
      I am not sure the result will be different even if  an estimated $200K is spent on modifications and equipment for the benefit of a private vendor. That's a ball park figure that has been given to anyone who ask, so no ,it's not made up.
      The decision to bid is still a business decision, something not always understood by those in government.   There was a sense of surprise when no one responded to the original bid specs.
      Food will not be part of things when the facility opens in the late winter or spring.

Do the same thing you are suggesting for the BrewHaHa. Drinks, just a couple items. All you will do with food is create a big expense to clean up after people who aren't smart enough to be courteous. Don't spend 200k to make some fat people happy.

The COW should have reached out to the local roach coaches to serve food outside the arena, Yes, many will complain they have to leave the arena. I wonder how money could have been saved. How foolish of me to expect the COW would want to save money.

The guy who said it cost too much to design and rebuild the arena which he voted for, is now leading the way to having another dumb incompetent overpriced design done. I guess its okay when its his idea.

Did you ever notice the giant exhaust fans that kitchens need? Did you know the building HVAC has to be designed upgraded and balanced in conjunction with those fans? I wonder if they put the giant grease trap in for the kitchen they never planed for? Do you know how much it costs to buy and change the oil on a fryer? Do you know how fast the oil goes bad, no matter how little you are using it? Do you know how long a box of soda syrup lasts before it goes bad?

This is going to be an extremely low volume business that needs to be able to put out high volumes on rare days and times and then sit there doing little or no business the rest of the days and times. That means you need a limited menu of things that will store for long periods with long shelf life and can be cooked with rapid cook high-bred ovens like the infrared microwave impinge combination. And it means you need to give the vender the option of what hours it is open. Which means you need vending machines for candy, soda and water and anything else you want available at all times.

Another well thought out plan by the city! Time for Addison to go, she has cost us taxpayers enough money and embarrassment in her short time here. She can take her buddy Gardner with her.

And the gut who said changes were made to downsize the stand to save money but doesn't know how much $ was saved. Fire him and fire her. Both.

Its a losing scenario for a food service operator, with no predictable schedule, no anchor hockey team, up front fees, spoilage of pershable food items, $15 minimum wages and the list goes on.

Maybe a catering arrangement with a local resturante is the way to go. But the only that it works is to have rights to alcohol sales in the venue.

Exactly, you should do it. You will lose about $10000 in the year and write it off and say it was a donation to parks and recs. After all, that appears what they wanted in the first place. A "sense" of surprise?? Cmon.

Yeah... Get your facts straight. This isn't July 2021 and there is no known concession lessee that is allowing tipping. Dum dum dum...

Dont be like us in Ogdensburg.. Nelson spearheaded a new visitor center soley for the purpose of naming it for himself.. Didnt happen but they did get a new building built and a perfectly good one torn down.. Come time for a concession they had to buy equipment but lo and behold a local popular eatery offered to run it for the city with their equipment.. Oh I forgot Nelson and the couple were fueding so it didnt happen. City bought $30,000 in equipment and someone run it for a year.. As a courtesy the concession gave a pig roast outside to the public but Nelson ordered all the tables taken back inside and did not allow their ussage.. The people got pissed and then arrested for their efforts.. The next year they had another vendor run it with basiclyt the same results.. Now its up for bid again after a failed attempt to make it a museum

Have SMC set up a ptomaine clinic on site then the concessionaire can just sell from inventory - so loss to spoilage.

A Chinese vendor would know how to do it.

7:40 is spot on... my only slight "disagreement" is that the guy (Butler) didn't want it and was certainly pressured into that vote. He had the right idea. Now, they have no choice but to get it fixed. Speaking of an above topic, I would gander that the money allocated for the Parks and Recs salaries is way to much...I would lump that in with the teachers.

$200,000??? That's about 10% of the cost of building an entire Applebees.

What is the fully burdened hourly rate for a minimum wage employees at your place of business, which includes half of social security, Medicare, workers compensation, various insurances, etc? Employers pay out far more than what an employee gets in a check. Given the current scheduled wage increases the fully burdened hourly rate will exceed $15/hr around 2019, which must be considered by any potential bidders, or sooner if Bernie gets elected and jacks up federal taxes.

Some of you miss the point in making sure the place has the food stand. It's one of the few chances the place has to return the investment.
