Years ago, I asked a grocery store meat manager what is it exactly do you put in your Italian sausage? He told me it was made from “leftover meat scraps.” After that I started making my own sausage. I use nothing but the finest ingredients starting with pork butt. I have been told it’s far superior to anything found in the supermarket.
How true 1:40. I remember my mother making home made Polish Sausage. Getting the pork butt, trimming fat cutting it up, spices, etc. Lotsa work, nothing comes close to home made. Unfortunately her secrets passed on with her. Should have paid more attention.
